The kransekage (literally wreath cake) is a traditional Danish (kransekage) and Norwegian (kransekake/tårnkake (tower cake)) confection, usually eaten on special occasions such as weddings, baptisms, Christmas, 17th of May or New Year's Eve.
Kransekage take the form of a series of concentric rings of cake, layered on top of each other in order to form a steep-sloped cone shape—often 9 or more layers—stuck together with white icing.
Kransekage cake rings are made with almonds, sugar, and egg whites. The ideal kransekage is hard to the touch, yet soft and chewy.
This confection is served by separating individual rings and breaking them into smaller pieces.
A 9 Ring cake is approximately 6” wide at the base. It scales approximately 8” in height. It serves 8-10 people.
An 18 Ring is approximately 10” wide at the base. It scales approximately 16” in height. It serves 15-20 people.
