I tend to roast this one more light to medium but can roast it dark if you like it that way but it will taste more on the smoaky chocolate than strawberry. This is a PNG, A/X quality coffee from the Kefana village, in the Goroka district of the Eastern Highlands Province. This coffee was cultivated by smallholder farmers who then also process their own cherry using small individual pulpers and then ferment in plastic bags.
